Open-pollinated beetroot gives you less uniformity and more resilience — roots vary in size and shape, and the plants shrug off conditions that check a hybrid. It is also the one you can keep: let a couple of plants run to seed in their second season and you never buy the packet again. Thin the seedling clusters as with the imported strain.
