Coriander bolts in heat, which is why it is a cool-season crop here — sow from October and you will cut leaf all winter. Each round “seed” is actually two, held in a shell; rolling them under light pressure to split the shell is the single trick that separates a patchy tray from a thick one. Sow every three weeks for a continuous supply.
