Palak is the crop that convinces people a balcony is worth planting. Broadcast thickly in a wide, shallow tray, thin as you harvest, and take outer leaves rather than pulling whole plants — a bed sown in October will still be cutting in February. It runs to seed as soon as the heat arrives, so treat it as a winter crop.
