Chillies want warmth to germinate — below about 20°C they simply sit. Once up they are among the most forgiving things you can grow in a pot, and a well-fed plant will crop for a year or more. Picking green keeps the plant producing; leaving fruit to redden tells it the season is done, so do both deliberately rather than by accident.
