Imported strain: rounder roots, finer rings and sweeter than the open-pollinated packet.

The traditional strain. More variable in shape than the import, tougher in poor soil, and you can save the seed.

The fat round bharta brinjal. Thin skin, few seeds, and it collapses properly over a flame.

Slim purple long brinjal. Holds its shape when sliced and fried, which the round one will not.

Carbon steel blades that pass each other cleanly, for stems up to a centimetre thick.

Shimla mirch. Slower and fussier than chilli, and worth the wait for fruit picked at full ripeness.
